Overnight Pumpkin Chia Oats


GF, Vegan, Refined Sugar Free, Nut Free


  • 1 cup unsweetened non dairy milk (I used coconut)
  • 4 tsp chia seeds
  • 1 tsp maple syrup
  • 2/3 cup pumpkin purée 
  • 1/2 cup rolled oats
  • 1 tsp each of nutmeg, ginger, and cardamom 
  • 1 1/2 tsp cinnamon

Put it Together

  1. Mix chia and oats together and set aside. In a second bowl mix milk, spices and pumpkin until combined. 
  2. Mix chia oats into wet mixture and stir under evenly combined. 
  3. Pour Pumpkin mixture into serving dishes or mason jar and put in the fridge overnight. In the morning top with a dollop of coconut kefir and sprinkle with cinnamon.
