GF, Vegan, Refined Sugar Free, Nut Free
- 1 cup unsweetened non dairy milk (I used coconut)
- 4 tsp chia seeds
- 1 tsp maple syrup
- 2/3 cup pumpkin purée
- 1/2 cup rolled oats
- 1 tsp each of nutmeg, ginger, and cardamom
- 1 1/2 tsp cinnamon
Put it Together
Mix chia and oats together and set aside. In a second bowl mix milk, spices and pumpkin until combined.
- Mix chia oats into wet mixture and stir under evenly combined.
- Pour Pumpkin mixture into serving dishes or mason jar and put in the fridge overnight. In the morning top with a dollop of coconut kefir and sprinkle with cinnamon.
