Chocolate Chili Chai Loaf

Ingredients:

  • 10 pitted dates
  • 1 cup prepared Chocolate Chili Chai tea (I used David’s tea) or favourite chai tea
  • 1 ¼ cup Oat Flour
  • ¼ cup arrowroot startch
  • ¼ cup EcoEating Organic Coconut Kefir
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp maple syrup
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 tsp grated ginger
  • ¼ tsp nutmeg
  • ½ tsp cardamom
  • ¼ tsp cloves

Topping:

  • Chocolate frosting (I used Organic Chocolate Frosting by Wholesome)
  • Cayenne to sprinkle on top

Put it together

  1. Preheat the oven to 350F, grease a loaf pan and set aside
  2. Prepare your chai tea and pour over the dates to allow them to soak in the tea for 10 minutes
  3. In a high-speed blender, blend chai tea, dates, vinegar, kefir, ginger, maple syrup and vanilla on high until smooth
  4. In a separate bowl combine flour, arrowroot, baking powder, baking soda, cinnamon, cardamom, cloves and nutmeg
  5. Add the chai mixture into the dry ingredients and mix until well combined
  6. Pour the batter into the loaf pan and smooth out the top
  7. Bake for 35 minutes or until a toothpick comes out clean
  8. Cool completely before frosting. Once cooled and frosted dust the top of loaf with cayenne 
  9. Slice and enjoy
